How Long Do You Grill Chicken on a Gas Grill?

There are a number of answers to “How long do you grill chicken on a ?” There are a variety of techniques for cooking chicken and each of them will determine the amount of time required. Regardless of the time involved, the breast should get to 165 F, or the juices should run clear when you twist a joint.

Here are a few methods of cooking chicken on a gas grill. Keep in mind, this is how I do it. There are many opinions, mine tend to be in the low and slow area because I’ve just not had good results cooking at super high temps.

My reference is to use a dry rub for seasoning. In fact, if I intend to use anything like barbecue sauce, I won’t put it on until just before it’s done, or after I take it off the grill.

I normally get the grill up to 400-500 F. I use a Bubba Keg grill quite a bit. This isn’t a gas grill so it’s a little different. On this grill I will place the breasts in the center of the grate for a few minutes on each side, then move them off to the edges where the heat isn’t quite as intense. I can close the vents down, but it won’t drop the temperature as quickly as a gas grill. I do all of this with the lid down.

On a 3 burner gas grill, I will light two to a medium setting, sear the breasts over the direct heat for a few minutes and then move off to the unlit part of the cooking area. I also turn the other burners to low. Lid shut for about 7 minutes per side!!!!

If you’re in a real hurry, you can torch your chicken, but I like a nice juicy breast and this is nearly impossible over continual high heat. It’s best to spend 15 minutes to get the job done right. Your taste buds will thank you.

Grilled Chicken Legs & Thighs

How long do you grill chicken on a gas grill? Legs and Thighs are fattier and need to cook to about 180 F, so will take a bit longer. I still follow a similar approach. Start with some high heat to sear each side and then move to low heat with the lid down. If you’re cooking breasts with them, keep the thighs closer to the lit burner so your chicken pieces finish at about the same time.

  1. It’s far easier to cook the chicken evenly once it’s flattened out.
  2. The dark meat has more exposure to heat and ends up being done at the same time the breast is done.
  3. With a good overall dry rub, the flavors are just like a low and slow smoked chicken.
  4. It’s juicy as can be.

On a gas grill at 350 F it will take 50 minutes. I usually put mine over the unlit burner on a 3 burner gas grill. This is considered a direct heat method, but I’m just not buying it yet. With my Bubba Keg and it’s heat retention, 350 F on the thermometer is serious! On my gas grill, it’s a joke. So I will have to write an article doing thins on the Bubba one day.

This method is the closest to true Q you’ll get on a gas grill, so I recommend trying it.

Now if I were to ask other grillers and barbecuers “how long do you grill chicken on a gas grill” I would get a lot of different answers. BBQ purists might tell you 0 minutes on a gas grill because they generally don’t use them. Setting that debate aside, it really comes down to your method of cooking.

One method I didn’t highlight was beer can chicken which can also be done on a gas grill. This will take closer to 3 hours which is why I generally do Spatchcock these days. I’ve also used a loaf pan technique which takes about two hours for a whole chicken. Again, most backyard chefs don’t have the time for these methods. But, they are definitely missing something!

Coated inside and out with a spicy rub, the skin on this juicy grilled chicken will be irresistible. There are as many choices of rubs on the market as there are markets to buy them from. One of my favorite grocery store rubs is Durkee’s Grill Creations chicken and rib rub. I like the spicy smoky flavor it gives to the skin of the chicken. Even though it says rib rub, I have tried it on ribs but was disappointed. Stick with chicken for this rub.

Of course if you have a favorite chicken rub, by all means use it! or you can try this dry spice rub for chicken.

Prepare and season the chicken:

  1. Remove neck and giblets from cavity. Rinse bird and pat dry.
  2. Place chopped onion and celery into cavity of chicken.
  3. Mix together rub with garlic and olive oil.
  4. Loosen skin of chicken but leave it intact.
  5. Rub mixture on top of and under the skin of the chicken, allowing enough to reach breasts and legs.

Prepare the grill for indirect heat

    Charcoal: Light charcoal. When they are ash-white, push them to the edges of the grill. Place an aluminum pan in the center of grill (under the cooking grate) with a little water in it.
    Gas: Light the outside burners of the grill to medium heat.

Grill the chicken

    Place chicken, breast side down, on grill right above the pan (not directly over the heat). Cover the grill and cook for about 1 hours, or until bird reaches 170 degrees, according to an instant-read thermometer. Turn chicken once or twice during cooking. If necessary, replenish briquettes to maintain fairly even heat.

Makes 6 to 8 servings

Dry Spice Rub Recipe For Chicken


I didn’t have a recipe for rub, I start with a cajun-creole style and build from there, just throwing things in until it tastes right. It took me forever to figure out how much of each to put together. Finally, I settled on measurements that make the most sense.

You can use this spicy yet sweet rub for beer can chicken, grilled chicken or bbq chicken.

Dry Spice Rub For Chicken

Ingredients

    1 Tbsp. light brown sugar
    1/4 C. paprika
    2 tsp. cinnamon
    2 tsp. dry mustard
    2 tsp. (or red) pepper
    1 tsp. powder
    1 tsp. powder
    1 tsp. kosher salt

Directions

  1. Mix all ingredients in a bowl.
  2. Coat inside and outside of chicken with the dry spice rub.
  3. Refrigerate at least 1 hour up to 8 hours.

How To Grill Chicken For An Explosion Of Flavor!


What is the best way to grill chicken? What is the best grilled chicken temperature? And how long to grill chicken is long enough? This is one of the most common grilling questions.

How long to grill chicken depends on a few things… the cut of the chicken, whether it is a whole chicken or maybe just legs and quarters, perhaps it is boneless breast, and how well done you like it. Some people like their chicken falling off the bone, and some like it DRY as a bone! So how many minutes to cook it is up to you and your desired outcome. Generally a good rule of thumb is to grill chicken no less than 30 minutes, turning several times for even cooking.

First things first though Are you grilling on a charcoal or a gas grill? Are you grilling pieces or a whole bird? Are you grilling or just ‘cooking’ on the grill? Because today, you can boil, braise AND grill on most grills. So these things will make a difference with your time and preparation.

I’d like to cover the how to cook chicken on a grill part first. This will work for chicken breasts, leg quarters, wings or even entire chickens. Chicken leg quarters are more cost effective and can be substituted for in any recipe. have a higher fat content that will give you a juicy and flavorful choice for the grill.

Steps for grilling Perfect Chicken

1. Marinate or Rub. The best way to grill chicken is with a marinade. Wash the meat first. With cuts of chicken, rub it with some good seasonings to taste (I like garlic salt, and pepper) and then marinate it with Italian Dressing. Or if you dont have that, then just use garlic, a small amount of vinegar, olive oil and some for your own home made marinade. Let it marinate for about an hour. If you choose a rub, Brush each piece with olive oil and season with your favorite rub or seasoning salt and pepper.

2. Prep the grill. Make sure it is clean by taking a wire grill brush and cleaning the racks. Take Pam grilling spray or a good dose of olive oil and rub it on the grill racks BEFORE you light the grill. Be careful though Dont apply oil to the open flame. Oil is flammable and too much will give you an out of control fire that you may not want!

3. Prepare the FIRE! For Chicken, only heat one side of a gas grill or push coals to one side if you are using a charcoal grill. This is called indirect heating.

4. Preheat the grill to medium high heat which is 325-350 degrees. Grills cranked to high will easily reach 450 degrees. Chicken parts render off a lot of fat during cooking, too much heat will result in lots of fire.

5. Time to Cook on your already heated grill. Place the chicken directly over the heat and grill with the lid open for about 3 minutes per side.

6. Move the chicken away from the heat source to the other side of the grill. With the lid down, cook the chicken about 40-45 minutes for breasts and quarters, 30-35 minutes for legs and thighs. The best way to tell is with a meat thermometer inserted into the thickest portion of the piece. Although the normal temperature for grilled chicken to be ‘done’ is 165 degrees, 170 will ensure the chicken does not have any of that slight pink color that most people are hesitant to eat.

7. Add BBQ sauce or glaze during the last 10 minutes and let it set while you prepare your table to serve.

Grilling chicken for your family and friends can be really fun and rewarding. To grill chicken into tender and juicy meats,you need to learn the tricks on how to bring the chicken to the correct temperature without undercooking or burning it. It is important that you realize that you cant simply take a out of the fridge and throw it on the grill and expect it to turn out moist and juicy.

If you take a look at most of the , you will notice that the marinade part plays a very important role. To ensure that your chicken gain the maximum flavor from the marinade, you need to marinate for at least several hours before putting them on the grill. If time is short for you, you will need to use an injector to insert the flavor deep into the meat. Since most of the grilling recipes are designed for both outdoor and indoor grilling, grilling your chicken over charcoal will work too.

As a golden rule, you should avoid piercing the chicken beforehand unless you intend to grill them immediately as the fat will drop out and catch fire. Tongs are really useful and you should get one to help you move the chicken around. If a flare up happens, you should immediately move the chicken to the upper rack with the tong or remove them from the grill until the fire is gone.

The best way to reduce the risk of having a flare up is to trim all unnecessary fat from the foods you grill, including oils in marinades or sauces. If youre using charcoal, make sure that there is no flames because they will burn the chicken. Let the coal turn gray about 1/2 through the coal first before placing the chicken on the grill.

Temperature around 230F-250F is the perfect heat for grilling chicken and the cooking time should take no more than one hour. Make sure that you turn the chicken pieces every ten minutes so that both sides can be cooked evenly. If youre going to use BBQ sauce, make sure that you add it ten minutes before the chicken reached its cooking time.

The easiest way to check whether the chicken pieces are fully cooked is to slice deep into the chicken and see if the juices run clear. Never eat undercooked chicken because they contain salmonella which is bad for your health. When you finished grilling the chicken, transfer them to a plate and let them rest for a few minutes so that the juice inside can really develop and the chicken will become moister.
