Recipe | Dijon Honey Mustard Grilled Pork Loin


Grilled Pork Loin

What is it about Dijon honey mustard that we are crazy about it? Sweet, tart, salty and just hot enough to open our nostrils to breath in the delicate flavors of chicken, pork or fresh water fish. It is also a nice side dipping sauce for just about any root vegetable, fried anything and as a glaze to chicken breasts.

What To Grill

    1 cup dijon mustard
    3 tablespoons honey
    4, 6 oz pork loin steaks
    4, strips apple smoked
    4 ounces cheese

How To Grill It

  1. Mix dijon mustard and honey. Stir and reserve in refrigerator until ready for use.
  2. Cut a small pocket into each pork loin steak. Fill each one with one ounce gouda.
  3. Wrap a piece of bacon around each pork loin steak. Pierce with bamboo skewer to keep bacon in place.
  4. Grill over apple wood chips until cooked to 150 degrees internal temperature.
  5. Glaze with a tablespoon dijon honey mustard per steak.
  6. Finish under broiler or with grill up to high heat (Big Green Egg or Weber Kettle grill, Brinkman smoker grill).

Mustard-Mayonnaise Slather for Grilling


Mustard for Grilling


This recipe is from the grilling cookbook 300 Big & Bold Barbecue & Grilling Recipes by Karen Adler and Judith Fertig. This is a delicious way to prepare salmon or chicken before grilling it. Kids love it and so will the rest of the family. This recipe is from the sauce and rubs section of the book. There are more complicated and much different recipes, this just happens to be one of the best and easiest and tastiest.

Ingredients:

1/2 cup mayonnaise
1/2 cup Dijon mustard

Preparation:

1 Cup of slather will yield about 4 pieces of chicken or fish

  • In a bowl whisk together mayonnaise and mustard.

Since this will make a slimy mess, a zip-loc bag is perfect.

  • Spoon the rub into the bag and slather the rub all over the chicken or fish, coating entirely. Be sure to discard any unused rub.

This is a rub not a , so it is not necessary to marinate.

  • Set up the grill for indirect heat, around 300-325 degrees.
  • For chicken, grill about 45 minutes or until juices run clear. Be sure internal temp reaches 160-165F
