    Just a comment on stuffing. You can cook turkey legs down with stuffing. I have twice so far with excellent results. Stuffing bags in the cavity and neck sewn in with cooking yarn and pins results in a very moist stuffing receiveing juices as the bird cooks. the stuffing bags work great and the yarn keeps the package in the cavity.
